Comes from the north western area of Indonesia, called Aceh. For those of you who are familiar with this area must know that Aceh produce tons of coffee in different varietals. Cultivated at the elevation of 1,400 to 1,500masl, this coffee is categorized as Sarchimor varietal. This time, Say Something Coffee roast Tanoh Gayo Pegayon which uses carbonic maceration technique in post-harvest process. What is carbonic maceration? In wine, carbonic maceration uses the injection of carbon dioxide to ferment the grapes without braking its skins. In coffee, however, the injection of carbon dioxide is aimed to ferment the seed rather than the fruit itself. This revolutionary method could bring us to the new stage of coffee processing.
