Cultivated at the elevation of 1,400 to 1,500masl, this coffee is categorized as Sarchimor varietal. This time, Say Something Coffee roast Tanoh Gayo Pegayon which uses carbonic maceration technique in post-harvest process. What is carbonic maceration? In wine, carbonic maceration uses the injection of carbon dioxide to ferment the grapes without braking its skins. In coffee, however, the injection of carbon dioxide is aimed to ferment the seed rather than the fruit itself. This revolutionary method could bring us to the new stage of coffee processing.
