This coffee was Space's attempt in doing non-conventional coffee processing: anaerobic cherry maceration. If not carefully done, this kind of process can be a disaster resulting in coffee that has over-fermented flavor, something you can relate to decayed fruits. But if it's done correctly, it can be magic: adding complexity to the fruitiness and enhancing sweetness and body.

A lot of our customer told us that this coffee was their "first love" in coffee. Meaning that before they try this coffee, they can never drink coffee black without adding sugar or milk. After this coffee, they are more intrigued to explore more about black specialty coffee because at last they can really taste many notes in coffee.
