These beans come from Fazenda Progresso, a beautiful farm located in the Bahia region of Brazil. This farm is surrounded by the Chapada Diamantina National Park, known for its stunning mountainous cliff formations. Fazenda Progresso has been developed in the Borré family since 1984, and is currently run by the very motivated, third-generation farmer Fabiano Borré, who use a hands-on approach to every aspect of coffee production. 700 hectares of land at Fazenda Progresso are planted out with coffee. At harvest time, this particular micro-lot was carefully hand-picked and then processed using pulped natural method: the coffee cherry’s skin and fruit were removed and the sticky, parchment-covered beans were laid out to dry on cement patios and regularly raked to ensure an even and consistent dry.
