This micro lot comes from the first day’s picking of a small plot called San José. The coffee was picked by a select group of employees, who are recognised and rewarded for their skill at picking cherries at peak ripeness. The cherries were transported from the field to the mill in perforated plastic boxes, which facilitate the passage of air over the coffee and prevent overheating. The San José was processed via the pulped natural method: the cherries’ skin and fruit were removed, and the sticky, parchment-covered beans were dried carefully on raised beds in a purpose-built greenhouse.
